Who knew that my Chocolate Vegan Cinnamon Mousse & Raw Almond Coconut Cookies would introduce me to the next chapter of my life, and the story I’m writing now.

This dessert was prepared by me in 2010, and I quickly snapped a photo on my way out the door. I arrived to a private dinner interview to what seemed to be a VIP and was in fact, one our Nations most prominent families, “The Cotton’s”. Or so he said.

I was 21 years old. I arrived promptly at six o’clock to a very traditional looking estate, resembling The White House. I was wearing a perfectly pressed navy blue blouse, chocolate colored pants, and my favorite pony fur boots at the time…and sadly not vegan! My awkwardly short golden hair was slicked back, wearing little to no make-up and the yummy organic dessert I created, would give a taste into my life as a foodie.

Walking up the stairs, through the perfectly manicured bright green lawn, past the American Flag, to the front door, and with the smell and sight of roses surrounding, it was DE-JA-VU. Lemon trees were blossoming to perfection, and the view of the South Pacific from the front step felt as though I was lost, somewhere in my dreams.

Holding my plate of Chocolate Vegan Cinnamon Mousse & Raw Almond Coconut Cookies, little did I know that this offering would invite me into a new world, and filled with politics like nobodies business.

Writing now, in a new chapter of my life, many pages later, it’s 2016.
I have created a life to love, that includes delicious & nutritious FOODS, connecting with brilliant souls, traveling our globe as a bird, free to soar, to learn, to live, to share and to love. Engaging with the engaged and finding opportunities to inspire, to serve and to help others discover their happiness.

The stories, places, and people that I have met and served, have inspired me during what feels to be the thick and the thin. My adventures are filled with much flavor, great joy, passion, very hard work and finding solutions in many ways. Living, working and traveling far away from people or places that I love, takes courage.

I have learned a skill to create harmony no matter who I’m with, connection to whatever I’m doing and peace wherever I am. Making positive choices is what keeps me shining bright, and reminds me to remind others, that no matter where you are in your life right now, just know that you are okay, it is in your journey to experience what IS and there is always a bright, new day.

No matter how many butlers are in my life, or fancy cars I drive in, or “important” hands I shake, my goal is to reach as many people as possible in my lifetime, and to share what I have learned; how to achieve a life to love…and how to turn lemons into lemonade!
